Many studies have linked eating breakfast regularly to good health. Some of the benefits include, better memory and concentration, lower levels of “bad” LDL cholesterol, and lower chances of getting diabetes, heart disease, and being overweight.
Many people tend to skip the morning meal due to a rush to get out the door. This is a big health mistake as it can throw off your body’s designed rhythm of fasting and eating. When you wake up, your body’s blood sugar levels are low from fasting all night. Your body needs stable blood sugar levels in order for your muscles to function properly. The best way to replenish and stabilize these levels is a healthy breakfast. When we opt out of giving our bodies that fuel first thing in the morning, we end up feeling zapped of energy and will be more likely to overeat later in the day. In a desperate attempt to replenish the calories your body needs and to elevate blood sugar levels, you can begin craving fatty, sugary foods making weight management and healthy eating a struggle for the rest of the day as your body tries to catch up.
Breakfast also restores glucose levels, an essential carbohydrate that is needed for the brain to function. There are many healthy and fast options that will give us the nutrients our body needs to get the day started right. All it takes is a little planning ahead and a decision to invest in our long term health. Here are eight amazingly easy, quick and delicious breakfast options that can be perfect for those on-the-go mornings!
1.BREAKFAST CASSEROLE MUFFINS.
loaded with potato, spinach, eggs, melted cheese and crisp bites of bacon, these delicious muffins are a great way to get some solid energy as you are running out the door.
About 12 minutes of prep time the night before and then 23 minutes of baking time which can also be done the night before, store in the fridge over night and pop them in the microwave before you head out in the morning.
If you prefer a more fresh from the oven approach, prepare everything the night before and then toss it in the oven for about 23 minutes in the morning as you get ready.

I am a huge sucker for quiche! I could each quiche all day- every day so these little breakfast quiche bites are very exciting. With an overall prep and cook time of about 45 minutes, these little guys are a little more involved- but it’s quiche, so that’s okay.

3.PIGS IN A POOL.
Here is another great “muffin” option from Taste of Home. Skip the McDonald’s drive thru in the morning and grab one of these homemade sausage pancake combos instead! With about a 45 minute prep time and a 20 minute bake time, these are a great meal to prepare the night before. The great new is that these yummy breakfast treats can be frozen in resealable bags so you can make a couple dozen at a time. Just grab one in the morning and microwave for 20-30 seconds on your way out!

4.CARROT CAKE BREAKFAST COOKIES.
Yep, I just said cake and cookie…. for breakfast! And did you catch the gluten-free part? Yeah, these sound AMAZING. I’m pretty sure I would have zero problem getting my kids to eat these for breakfast on those harried mornings as we run out the door to get to school on time. These are SO much better than those sugar filled breakfast bars you can find in the grocery store. I mean, seriously, have you looked at the labels on those things? You could eat a candy bar and not consume any more sugar than you would by eating one of those. Yikes! Anyway, these look like a terrific idea they are kid friendly and they can be frozen. Win, win, win.

5.HEALTHY APPLE COBBLER MUFFINS.
All I know is that if I can eat Apple Cobbler and not have to pay for it at the gym later, I’m in! These look SO GOOD. I will be trying this recipe for myself this week. These yummy bites of heaven are packed with whole wheat flour, oats, protein from eggs and walnuts and lots and lots of apple goodness. After a quick 20 minutes of prep time and another 15-18 minutes to bake, you are all set for a healthy and yummy apple cobbler breakfast on the go. They freeze well too!

6.CRISPY BAKED BREAKFAST TAQUITOS.
Not only are these a great, healthy breakfast option for those of us who could live off of Mexican food, but they can also pull double duty in place of those frozen grocery store taquitos as a healthier after school snack. If your kids are like mine, they are so crazy picky about what they eat it can be REALLY easy to just grab a huge bag of pre-packaged snacks to make them happy. One of my kids favorite snacks is taquitos, so these are a huge find for my family. Packed with eggs, turkey sausage, peppers, mushrooms, cilantro and cheese, these little guys are like a crispy mini omelette heaven!

7.VANILLA BEAN CHIA PUDDING.
For those mornings when eggs just aren’t the thing, this amazing blend of vanilla bean, almond milk, chia seeds, nuts and fruit is pretty irresistible! I know I am a goof, but I love things that are organized and things in mason jars. Opening a file cabinet that has been color-coded or a bookshelf in alphabetical order is my happy place. Also, anytime I can find a reason to use a mason jar, I’m all over it. So, you can understand that knowing I will wake up to this yummy treat all ready for me in the refrigerator in morning all neatly layered… in a mason jar is pretty exciting. Aside from my neuroses, however, this breakfast option looks extremely mouth-watering, don’t you think? Oh! And even more good news, it is gluten-free and vegan!

8.NO BAKE ENERGY BITES.
I can personally attest to these amazing little mouthfuls of yummy! I always have a batch of these in the fridge. They are a great go-to snack during the day, after school and of course as a grab and go breakfast. My kids LOVE them and they are super easy to make. In fact my daughter often makes huge batches and takes them to school to share with her Spanish class (her Spanish teacher offers extra credit to her 4th period class for anyone who brings snacks for the everyone- because she is a genius). These things are full of protein and tons of other goodness that make them an excellent breakfast! Seriously, trust me on this one- these will rock your world.
