I found this recipe in our HOA newsletter a while ago and just got around to trying it out. They were so easy to make and taste amazing. This is a great snack that satisfies your sweet tooth without having to pack on the calories and sugar, not to mention they offer a great boost of energy!
1 cup dry old-fashioned oats
2/3 cup toasted coconut flakes
1/2 cup peanut butter or almond butter
1/2 cup ground flax seed
1/2 cup semisweet chocolate chips
1/3 cup honey
1 tablespoon chai seeds
1 teaspoon vanilla extract
(this makes about 12 energy bites)

- Stir all ingredients together in a medium bowl until thoroughly mixed.
- Cover and chill in the refrigerator for approx. half an hour.
- Once chilled, roll the mixture into about a dozen balls.
- Enjoy!*Store your No Bake Energy Bites in an airtight container and keep refrigerated for up to one week.
